Baked Stacked Eggplant by Cedar Lane Natural Foods

The product: I stopped by my local Publix to pick up some more vegetarian frozen lunches. The Baked Stacked Eggplant frozen meal by Cedar Lane Natural Foods caught my eye. The eggplant layered with pesto and four cheeses sounded tasty and it is all natural with only 230 calories. 

The taste test: I find that often times frozen layered eggplant entrees do not cook evenly in when microwaved. The baked stacked eggplant cooked well in the microwave with no problems.  The large slices of lightly breaded eggplant tasted fresh. The creamy four cheese mixture and fire roasted tomatoes added sweetness which complemented the saltiness of pesto. The pesto adds a unique touch to this product.

The verdict: With only 230 calories Cedar Lane Natural Foods really went above and beyond with this great tasting product! The Baked Stacked Eggplant tasted surprisingly fresh for a frozen meal. Cedar Lane Natural Foods has a variety of breakfast, lunch, gluten free and vegetarian products and I look forward to trying them.

Tandoor Chef's Masala Dosa frozen entree

The product:  I grabbed Tandoor Chef's Masala Dosa on a quick trip to Whole Foods.  I love Indian food with its many vegetarian options.  There were four individually wrapped masala dosa in the box with two packs of chutney that required 10 to 15 seconds in the microwave.  The product is not microwave friendly and the preferred method of cooking is a griddle.  I do not have a griddle so I went with option #2 my oven.  The product took an extra 4 minutes in the oven.  It cooked up crispy on the outside and was easy to plate.
 
The taste test: The outer shell was airy and crisp.  The potato, rice and onion filling was hearty, rich and nicely spiced.   The chutney mix of coconut and spices and complimented the masala dosa.

The verdict:  I enjoyed Tandoor Chef's Masala Dosa.  Unfortunately, due to the griddle and/or oven cooking methods this is not something I could take for lunch at the office.

Amy's Roasted Polenta with Swiss Chard

The product:  I came across it at Whole Foods.  Could it be?  Roasted polenta and swiss chard as a frozen entrée?  How could this possibly taste good?  The polenta is made with organic cornmeal and is described as being topped with a vegetable stew that includes mushrooms, organic squash and tomatoes.  The swiss chard is slow-roasted.  

The taste test:  I am no stranger to Amy's products and this is one of the latest that Amy's has added to the vegetarian frozen products line.  The roasted polenta was perfectly creamy, smooth and sweet.  The topping of vegetable stew tasted mostly of tomatoes, but complimented the polenta well.  The swiss chard had a surprisingly fresh taste for a frozen entrée.

The verdict:  I enjoyed this meal and will purchase it again.  It is filling, not too heavy and the chard tasted fresh.  As an added bonus this is one of Amy's Light and Lean products and contains only....wait for it...140 calories!

Amy's Vegetable Parmesan Bowl review

The product: I happened across a new bowl from Amy's in the frozen section of Whole Foods.  I purchased the Vegetable Parmesan Bowl for lunch at work the next day.  It is described as a ratatouille of vegetables and organic brown rice.  The bowl is gluten free.


The taste test: The eggplant, onions and mushrooms seemed to be cooked to a mushy texture.  The broccoli and green beans stood out as far as what I tasted the most. The tomato sauce was tangy, but the cheese was lacking.  The portion was a good size for lunch.


The verdict: I will purchase Amy's Vegetable Parmesan Bowl again.  When compared to other Amy's Bowls I feel the vegetable parmesan ranks on the low end as far as taste.

Vegetarian Frozen Lunch Options: Vegetarian Pad Thai

Do you find yourself searching the frozen food isles to find new and exciting vegetarian lunch options?  Hurry to Publix and grab one of these Tandoor Chef Vegetarian Pad Thai frozen lunches.  Wow!  This entree is filling, loaded with veggies, tofu and full of great pad thai flavor.  This Tandoor Chef lunch is sure to sure your pad thai craving! 

On a side note be careful not to overcook the Vegetarian Pad Thai like I did or the noodles will end up crispy.  I suggest checking your lunch halfway through the cook time.
